Last night’s Buddha bowl … The combination of Last night’s Buddha bowl … The combination of flavors was amazing.

Lemon juice and miso in the blended chickpeas. Sesame oil on the slaw and tofu marinated in coconut aminos and tamari. All on a bed of quinoa and topped with sesame seeds.

And it didn’t take long at all to make. 🌱

Did you know you can make pizza crust with red len Did you know you can make pizza crust with red lentils? It’s so ridiculously easy. You soak the lentils for a few hours then rinse them and blend in a high powered blender with some water and garlic. Pour it into a cast iron pan and bake. Crispy on the outside but soft on the inside.
.
I’m always hunting for new plant based meals for my 10 month old and toddler and this pizza is a win. The crust and vegan Parmesan are from the Plant Based Juniors cookbook.

I made the sauce in my vitamix as well. Diced tomatoes, oregano, basil, garlic powder, onion powder and a couple of medjool dates for sweetness. I’m a big sauce girl - definitely needs to be made right - and I could drink this stuff it’s so good.

The vegan parm is made with cashews, nutritional yeast, flaxseed (subbed for the hemp seeds because I was out of them) and garlic powder.

Baked these beautiful vegan and gluten free bluebe Baked these beautiful vegan and gluten free blueberry muffins by @powerhungrycamilla this week. They’re made with a base of oats and cashews and I used wild blueberries for the topping. They are full of nutrients and my three year old loves them.

Things have been super busy around here with a 10 month old who is almost ready to walk on her own and a three year old who is bursting with energy so it’s been tough to get in the kitchen as much these days. Hoping to get back into the swing of cooking more healthy plant based food soon.

It’s been more than a year of eating totally veg It’s been more than a year of eating totally vegan and gluten free. In the past I wavered back and forth - sometimes I’d be vegan for a bit but then I’d eventually go back to eating cheese and seafood. But this is now a full on commitment for not only health reasons, but for the environment  and wellbeing of animals.
.
I share a lot of my recipes in my stories but thought it might be a good idea to show a roundup of some of this week’s plant based dishes. My mouth is watering looking at some of these meals. 🤪 Many of them use the same cashew miso dressing.
.
Usually I love what I cook but the one miss this week was the spaghetti squash dish with roasted eggplant and tomatoes. The dressing just didn’t fit the dish. It would have been so much better with a tomato sauce (my favorite jarred one is Rao’s marinara by the way. I could literally drink it).
.
1. Shaved Brussels sprouts salad with roasted broccoli, sweet peppers, castelvetrano olives & cashew miso dressing.
.
2. Mixed salad with cashew miso dressing.
.
3. Brown rice stir fry made with frozen veggies and edamame (my toddler loves this dish).
.
4. Roasted spaghetti squash with eggplant and tomatoes (super easy - put everything on a sheet pan and roast).
.
5. Creamy smoothie made with frozen bananas, macadamia nut milk, cauliflower, @earthchimp vanilla protein powder & natural peanut butter.
.
Are you thinking about eating more plant based? I promise, you will love it.

Feeling brave today, I finally ventured out of the Feeling brave today, I finally ventured out of the house solo with my two girls to take them to a museum. While holding my seven month old, a lady asked if I was expecting. “No,” I said. “I just haven’t lost the baby weight.” Why I even felt the need to tell her that, I don’t know. I was caught off guard and didn’t know what else to say. After starting out our adventure on such a high, I felt defeated and wanted to cry. 

Maybe what I should have said is I don’t sleep very much and when I do it’s only for a few hours at a time. Or it’s hard to workout when I’m constantly trying to keep my tiny humans healthy and happy. Or that I’m literally making food for my baby with my body which makes me always hungry. I could have said my abs separated with my first pregnancy and never returned to their normal position (diastasis recti) and that it only got worse with my second child. I could have explained that I start the day off looking pretty trim but as it progresses, so does my belly. Or that if I’m standing a certain way like holding my baby, yeah, I do still look pregnant.

But really, I didn’t need to say any of that because I know my worth is more than my postpartum weight loss.

So just a friendly reminder, never ask a woman if she’s expecting. And for the ladies who are also on their journey after baby, whatever that entails, I see you. ♥️
