The nursery is coming along! I finally got all of The nursery is coming along! I finally got all of the artwork up. I’m 22 weeks going on 23 and this pregnancy is so different than the last. There’s so much less worrying about the unknown, what to expect. No classes to take (which didn’t teach me much anyways 🤪). Not much stuff to buy since we already have most of the baby gear we need. Plus we’re not completely rebuilding a home during this pregnancy so there’s also that. Did you find your pregnancies differed?

I’ve been cooking up a storm over here this past I’ve been cooking up a storm over here this past month. We are so committed to eating whole foods plant based and I’ve also been gluten free. I would definitely say our diet reflects the way we feel. I’ve got so much more energy than before - which is huge bonus being pregnant - and less mental fog.
.
This was tonight’s dinner made with food we had on hand: gluten free pasta with peas and chickpeas. I blended the sauce in my vitamix:
+soaked cashews
+water sautéed onion and garlic
+a can of diced tomatoes that I also sautéed
+olive oil (added after sautéeing to maintain the nutrients)
+basil (fresh and dried)
+soaking water & pasta water
+a teeny bit of Himalayan sea salt
.
Even Grace ate the pasta and loved it, which was awesome because I normally cook her something different. Swipe for a shot of her plate. I kept the chickpeas on the side for her and also gave her some baked tofu. For dessert she had a chickpea cookie and blueberries.
.
I challenge you to eat more plants. Get creative in how you use them in your meals. And look at labels to make sure you’re not eating foods with additives and other man made so called “ingredients” (because there is an obscene amount of them in the typical American diet).

Nourish your body with real food and your body will take care of you. ♥️

Dinner tonight inspired by Simon Hill of @plant_pr Dinner tonight inspired by Simon Hill of @plant_proof ... Quinoa, sweet potatoes, chickpeas with turmeric and cumin, and kale.

I didn’t have tahini to make his dressing so instead I blended pepitas, hemp seeds, olive oil, garlic, lemon juice, miso and water in my @vitamix ... It was definitely heavy on the garlic but that’s okay. It’s rich in selenium, cleanses the liver, and helps alkaline the body!
.
This meal was really easy to make using ingredients we already had on hand and the end result was REALLY good. Plus Grace got to eat a post dinner snack of sweet potato.
.
If you’re looking for a new podcast, I’m really loving Plant Proof (handle above). The last episode I listened to featured @whitneyerd of @plantbasedjuniors and it was SO informative for a mom like me trying to feed my toddler a mostly plant based diet.
.
I learned so much. Like you know a toddler’s diet should be 30-40% fat? I didn’t. I’ve always given Grace good fats like avocado, coconut oil, coconut cream, nut butters, etc. but I’m definitely going to be a lot more conscious about it.

I’ve pretty much been a vegetarian my whole life I’ve pretty much been a vegetarian my whole life (aside from eating fish), but when I look back at the foods I ate that I thought were “healthy,” I had no idea what I was doing.
.
It wasn’t until 2012ish that I started to see food in a whole new light. I was going through some health stuff and happened to see a doctor on TV talk about how you can prevent and fight disease by eating a nutritarian diet. That’s when it clicked. That doctor was @joelfuhrmanmd and he talked about the importance of eating greens, beans, onions, fruits, veggies, nuts and seeds. It was like a lightbulb went off. I went out the next day and bought his book Disease Proof Your Body. After devouring it, I read his book Eat to Live. It changed my life.
.
In the years since, I’ve tried to follow a mostly plant based, low processed food diet with minimal dairy. I haven’t been perfect and there have been times where I’ve totally fallen off the wagon (full disclosure: I ate a McDonald’s fish fillet and fries during my first trimester). But I always come back to this way of eating because it’s what makes me feel best.
.
I consider everything I put in my body. I am diligent about reading ingredient labels (did you know many pickles have high fructose corn syrup and food coloring in them??!)
.
And in 2021, I’ve recommitted to nourishing my body (and baby in my belly) with whole, real foods. I’ve also gone gluten free to help my hypothyroid (hashimoto’s disease).
.
I’m putting this out there not to shame anyone else about how they eat but to hold myself accountable and hopefully inspire others to see that FOOD TRULY IS MEDICINE.
.

My diet ebs and flows and during the first trimest My diet ebs and flows and during the first trimester, it most definitely ebbed. I didn’t want to eat anything I normally eat - smoothies, salads, etc. Literally all I wanted were bagels and cream cheese. 😳

But I always find my way back to eating plant based because I truly believe it’s best for our bodies - protective against diseases like cancer and COVID that is currently ravaging our country right now - probably because of the poor standard American diet filled with processed and nutrient deficient foods.
.
Have you ever REALLY looked at the ingredient list on that so called “healthy” bread you buy from the grocery store or the dressing you put on your salad? It’s probably loaded with sugar, additives and preservatives, all of which can destroy our bodies over time.
.
I don’t say this to shame anyone - and no one eats perfectly all the time - but I truly want to help others REALLY see what they are putting in their bodies and feeding their children.
.
So now that I’m feeling more like myself again in trimester two, I’m recommitting to nourishing this baby with real, whole foods - fruits, veggies, nuts, beans, seeds, free range organic eggs, quinoa, buckwheat, etc. and sharing more about this way of eating.
.
I’m tailoring back the Netflix bingeing and instead rereading books that have inspired me to live a longer, healthier life (books I’ve read several times over) and also adding a few new ones. If you have any interest in learning more, here are some I highly recommend:

📚Super Immunity by Dr. Fuhrman (the book that changed my view of food)
📚Eat to Live by Dr. F. (transform your body, lose weight while also nourishing it)
📚The Science of Skinny (all about what processed foods are really made of,
what makes them so bad for our bodies and why whole foods are so important)
📚The Toxin Solution (a book I have yet to read about toxins we encounter in our everyday life and how to rid them from our bodies)
📚Grain Brain (about how gluten, sugar and carbs effect the brain)

Welp, this picture pretty much sums up 2020. But I Welp, this picture pretty much sums up 2020. But I have to say, even though we are amidst a pandemic, this year wasn’t all bad.
.
Yeah it’s been tough being confined to our house (especially as a new stay at home mom who was REALLY looking forward to doing all of those mom activities), buuuut I’m also a homebody.
.
This year my cutie pie turned one.
.
I’ve gotten to watch Grace learn and grow.
.
My husband got to develop a special bond with her that he otherwise wouldn’t if he was still commuting to the office.
.
Grace started sleeping until 7am.
.
We are healthy.
.
We are happy.
.
So yeah, overall it’s been a decent year, but I’m also looking forward to what’s in store for 2021 … cause I think it’s gonna be good. ;-)
