29 1/2 weeks in and got some maternity photos done 29 1/2 weeks in and got some maternity photos done today to remember this baby bump. So much is different between this pregnancy and my first one.

Sharing this for other expectant moms out there .. Sharing this for other expectant moms out there ... A few weeks ago I was told I was due for my glucose tolerance test. If you’re not familiar, it’s to check for gestational diabetes. To do the test you have to ingest a synthetic drink made with ingredients like artificial food coloring, dextrose and preservatives. Some versions of the drink even contain brominated vegetable oil which is banned as a food additive in Europe. An hour after drinking it your blood glucose is checked.
.
For someone like me who eats a whole food plant based diet, putting that junk in my body all in the so-called name of “health” does not make one ounce of sense. So I asked for an alternative from the doctor in my practice I had most recently seen. I was given a firm “there are no alternatives” and told I’d be considered “non compliant” (not sure exactly what that means). I was also told my baby would have to undergo “additional testing” when she’s born (I checked with my ped and he said it’s not a big deal - a heal prick).
.
Meanwhile, my friend who is an ob/gyn told me they should definitely offer another testing option. So being the person I am, I made my next appointment with a doc at my practice who I thought would be more understanding. And ... he was.
.
He basically said no problem. So next week I’ll be getting a fasting glucose test, going home to have my regular smoothie or oatmeal breakfast, then returning two hours later to get a second glucose test. They’ll also check my A1C.
.
My doc is not concerned about me having gestational diabetes because I didn’t have it with my first pregnancy and also because of my diet/lifestyle, which is often the recommended intervention for those diagnosed with gestational diabetes.
.
So I guess at the end of the day, sometimes you need to take your health into your own hands. I’m not saying don’t trust your doctors, but if you feel strongly about something, find one who will listen.

I made this Asian inspired Buddha bowl for dinner I made this Asian inspired Buddha bowl for dinner tonight. I’m not gonna lie - I wasn’t too on fire about it while I was putting it together - but ended up being hooked by the first bite. I’m not big into leftovers because I don’t like to eat the same thing two times in a row 🤣, but I’m seriously wishing I had some for tomorrow.

The recipe is from our new @coconutbowls cookbook. I just tweaked the slaw a bit, adding some sesame oil and rice vinegar. The combo of flavors was so delicious: Tofu marinated in coconut aminos, plain quinoa, creamy chickpeas with miso and lemon, and Asian slaw made with shredded carrots, edamame and radish (I subbed radish for cabbage since I didn’t have any). So easy to make and so good.

Officially 27 weeks today and time is flying by. Next week I’ll be in the third tri which means I better start buckling down and getting the baby stuff together. Cause to be honest, I haven’t done much in the way of preparing other than paint and decorate the nursery. 🤪 You can see where my priorities lie. The second pregnancy really is different from the first.

Made some macadamia nut pesto tonight to serve wit Made some macadamia nut pesto tonight to serve with peas and gluten free pasta (the best kind I’ve found so far is by Bionaturae).

Hubs and I loooovved the pesto. Grace, not so much. But she did devour the peas.
.
I’ve learned though that Grace can love something one day and not the next, so I always keep trying.
.
She’ll be two next month and we’ve given her mostly plant based foods since she started eating solids. I’m happy to say she’s a really good eater and open to trying new foods if she sees mom and dad eating them (like edamame, which we gave her a few weeks ago and she can’t get enough of).
.
If you think your kid won’t eat this way, you might be surprised! Tastebuds can change, including yours. 😊 🥦

After being cooped up in our house for so long - a After being cooped up in our house for so long - and having to cancel our big Disney trip this year - we decided we really needed a change of scenery. So this past weekend we went to Newport, RI for the night.
.
We had so much fun. Grace loved running around the huge hotel lobby and looking at the fountain. She wasn’t as crazy about the chilly indoor pool, but was super excited about going on lots of walks and to parks.
.
We also stuck to whole food plant based meals. We did some research beforehand to find restaurants that offer plant based dishes. If you haven’t been to Newport lately, there are so many options - @rootonbroadway @driftcafenp @diegosnewport.
.
So now the question is, where to next? New England friends, what are some other drivable destinations you recommend visiting? We’ve got Portsmouth, NH on the list, but would love some out-of-the-box suggestions. We definitely want to squeeze in a couple of mini trips before this family of three becomes a family of four.

It’s been 70 days since my husband and I decided It’s been 70 days since my husband and I decided we wanted to fully focus on eating whole foods plant based (and for me, going gluten free for Hashimoto’s). While we’ve always tried to eat plant based, we had been indulging over the holidays — and frankly, way before then — on foods that didn’t make us feel good. We definitely had one too many pizza nights. I wanted to not only to make sure I’m giving this baby the best nutrition possible but we also want to live long DISEASE-FREE lives.
.
If you’ve been following my stories, you’ve seen some of the foods we’ve been eating so I just want to give an update on how I feel. Taking out gluten has been huge. My long term goal is to get off my thyroid med (which I’m told I’ll be taking the rest of my life and won’t accept) but a huge benefit I’ve seen so far is I’m sleeping better than I have in years ... and it’s not always easy to sleep well when you’re pregnant. I had terrible insomnia while expecting Grace. I think my head hit the pillow last night and I was literally asleep. In the past, that NEVER happened.
.
I’m not one to get too personal on here, but for the sake of potentially helping someone else, I think a big part of my problem was post nasal drip. In my 20s my tonsils grew and I eventually had them removed (not fun as an adult). My ENT told me it was due to GERD (which I KNEW I didn’t have considering I ate a mostly healthy diet). I thought it might be an allergy from one of the fruits in my smoothie. But now it’s all but disappeared (despite my many smoothies). After doing a bit of research, I’m convinced it was gluten all along.
.
This is not to say everyone should go gluten free. There are so many beneficial whole grains that have gluten in them. But if you think you have a sensitivity or are suffering from an autoimmune condition, perhaps try it.
.
Also, going gluten free but eating packaged or processed gluten free foods is not the way to go. That’s just replacing one nutrient deficit food with another. For me, focusing on plant based whole foods makes me feel healthy inside and out.

The nursery is coming along! I finally got all of The nursery is coming along! I finally got all of the artwork up. I’m 22 weeks going on 23 and this pregnancy is so different than the last. There’s so much less worrying about the unknown, what to expect. No classes to take (which didn’t teach me much anyways 🤪). Not much stuff to buy since we already have most of the baby gear we need. Plus we’re not completely rebuilding a home during this pregnancy so there’s also that. Did you find your pregnancies differed?

I’ve been cooking up a storm over here this past I’ve been cooking up a storm over here this past month. We are so committed to eating whole foods plant based and I’ve also been gluten free. I would definitely say our diet reflects the way we feel. I’ve got so much more energy than before - which is huge bonus being pregnant - and less mental fog.
.
This was tonight’s dinner made with food we had on hand: gluten free pasta with peas and chickpeas. I blended the sauce in my vitamix:
+soaked cashews
+water sautéed onion and garlic
+a can of diced tomatoes that I also sautéed
+olive oil (added after sautéeing to maintain the nutrients)
+basil (fresh and dried)
+soaking water & pasta water
+a teeny bit of Himalayan sea salt
.
Even Grace ate the pasta and loved it, which was awesome because I normally cook her something different. Swipe for a shot of her plate. I kept the chickpeas on the side for her and also gave her some baked tofu. For dessert she had a chickpea cookie and blueberries.
.
I challenge you to eat more plants. Get creative in how you use them in your meals. And look at labels to make sure you’re not eating foods with additives and other man made so called “ingredients” (because there is an obscene amount of them in the typical American diet).
.
Nourish your body with real food and your body will take care of you. ♥️
