Hey there! I’m Meghan Yost, the voice behind this blog.

You know the quote from Ferris Bueller — “Life moves pretty fast. If you don’t stop and look around once in a while, you could miss it?” — Well my life seems to be moving at light speed.

Several years ago I married the best hubby around (yes, he cooks and cleans AND brings me “I love you day” presents).

Since then we purchased my grandparents’ house and undertook a massive remodel. We turned what was a classic 1950s ranch house into a beautiful craftsman ranch. We recently moved in but are finishing some final projects as well as slowly but surely furnishing and decorating.

We also welcomed our beautiful baby girl Grace Catherine into the world and I left my job as a full time multimedia journalist to stay home with our daughter.

Phew, what a whirlwind journey it’s been and we are just getting started!

I hope you’ll follow along as I navigate mommyhood, craft new plant based recipes, travel and share all things lifestyle related.

Oh, and if you’re still wanting to know a little bit more about me and my story, here are some random facts:

    • I was born and raised on the shoreline of Connecticut and despite exploring other places, keep finding myself back where I started.
    • I was an extra in a movie with Leo DiCaprio and Kate Winslet and (swoon) Leo put his hand on my back during the scene I was in (and during the multiple takes we shot).
    • Instead of studying abroad in college, I studied in Honolulu, Hawaii for a semester. It was my final semester in college so yeah, I spent a lot of time at the beach.
    • For a while after college I worked at the “happiest place on earth” (Disney World, duh!) as a character performer. Mickey, Minnie and I were super tight. 😉 Oh, and Donald too.
    • I lived in Orlando for almost seven years before deciding to take a leap of faith by quitting my job and moving back home to Connecticut.
    • After moving home, I met my husband on Match.com (don’t knock online dating til you try it)
    • We got engaged after nine months of dating (when you know, you know)
    • We got married at a vineyard in Connecticut in 2016.
    • Our three favorite places in the world to visit are Maine, Maui and Captiva, Florida
    •  I love sandy beaches and tropical locations.
    • I’ve been a pescatarian since the 6th grade (so let’s just say more than two decades), but I feel the healthiest when I’m eating a fully plant-based diet free of gluten. Check out some of my recipes.
    • I’m addicted to seltzer.
    • I love clothes but hate shopping.
    • I’ve got green eyes and lots of curly hair thanks to my dad (who is now bald).
    • I’m a former TV reporter who got to interview some pretty cool people during my career — Diego Luna, Tiffany Amber Thiessen, the cast of The Chew, former Florida governor Rick Scott, Catriona Balfe, Sam Heughan, plus a whole host of other “everyday” people who have done amazing things.
    • I didn’t just “interview” people as a TV reporter, but also shot and edited my reports (the technical title is multimedia journalist).
    • When I was a kid, I was obsessed with ghosts and my family has lots of spooky stories to share, including myself.
    • I loved to go fishing as a kid, but never caught fish … only lobsters.

Here are a couple of ways to add seeds to your lit Here are a couple of ways to add seeds to your little one’s lunch … Slice cucumbers and top with vegan cream cheese (I like Kite Hill) and hemp seeds. Also sprinkle chia seeds into a peanut butter and jelly sandwich.

Both hemp and chia are complete proteins containing all essential amino acids. They have omega 3s, iron and fiber.
.
This is the lunch I packed for my 3 year old today. PB&J on sprouted grain bread with no sugar added all fruit jam, peanut & almond butters and chia seeds, cucumber slices as mentioned above, blueberries, and freeze dried snap peas.

Grilling season is here! It was 80 degrees in Conn Grilling season is here! It was 80 degrees in Connecticut today so we thought it’d be a good idea to see how the @actualveggies veggie burgers do on the grill. Perfecto. 👌🏼

Loved their green burger with kale, broccoli, navy bean, etc.

We also grilled some corn and it was so delicious. Plus we did some zucchini, squash and peppers. So good.
.
Tonight I topped my burger with lettuce, tomato and aioli. Had to skip the avocado because I’m taking a @dutchtest in a couple of days… it’s a hormonal test from the naturopath I started seeing this week. Looking forward to improving my overall health with her help. One of my goals is to get off the thyroid medication I have to take every morning (which traditional doctors usually say you have no choice but to take for the rest of your life) and she said she’s helped people do just that. So fingers crossed. 🤞🏻

I’m looking for some easy and healthy plant base I’m looking for some easy and healthy plant based recipes for my baby for an upcoming trip to Mississippi. Im trying not to cook much but know I’ll have to prepare some food. So I today I’m testing out these baby falafel patties by @mummytodex … they’re quick and easy to make and require no special equipment. Hopefully baby Sadie likes them. 🤞🏻

It’s hard to come by packaged vegan foods withou It’s hard to come by packaged vegan foods without ingredients I don’t like - cane sugar, canola oil, or just other weird additives - but these veggie burgers from @actualveggies are made with all the ingredients I love … REAL veggies, beans, grains and spices.

I’ve found it really hard to prepare and cook as much healthy food now that I have a baby and toddler so these burgers make my life so much easier. I don’t feel guilty not cooking a big meal. And bonus for the summer - it’s actually recommended that you cook them on the grill.

They’ve got four different kinds of burgers all color coded by their ingredients - orange, green, purple and black.
.
I paired the purple burger (beets, carrots, oats, navy beans, etc) with a lemon garlic aioli, shredded romaine and avocados and a side of herb roasted carrots and tomatoes. My gosh, it was good.

Made some vegan sloppy joes on Friday night with l Made some vegan sloppy joes on Friday night with lentils, mushrooms, onions and tomatoes. The recipe is from the @plantbasedjuniors cookbook. I’m still working on getting my toddler to eat them. She prefers just the roll 🤣 but my husband and I enjoyed them and my 10 month old took one bite so that’s a win.

I served them on Friday with a side of homemade sweet potato oven fries and today I’m having the leftovers with a quick and easy green bean salad.

I made the salad by opening up a can of green beans and a can of kidney beans and tossing them with @motherraw’s Greek dressing.

Lemon juice and miso in the blended chickpeas. Sesame oil on the slaw and tofu marinated in coconut aminos and tamari. All on a bed of quinoa and topped with sesame seeds.

And it didn’t take long at all to make. 🌱

Did you know you can make pizza crust with red len Did you know you can make pizza crust with red lentils? It’s so ridiculously easy. You soak the lentils for a few hours then rinse them and blend in a high powered blender with some water and garlic. Pour it into a cast iron pan and bake. Crispy on the outside but soft on the inside.

I’m always hunting for new plant based meals for my 10 month old and toddler and this pizza is a win. The crust and vegan Parmesan are from the Plant Based Juniors cookbook.

I made the sauce in my vitamix as well. Diced tomatoes, oregano, basil, garlic powder, onion powder and a couple of medjool dates for sweetness. I’m a big sauce girl - definitely needs to be made right - and I could drink this stuff it’s so good.

The vegan parm is made with cashews, nutritional yeast, flaxseed (subbed for the hemp seeds because I was out of them) and garlic powder.
